Broccoli & Beef Stir Fry


 My husband and I were looking through the dozens of cookbooks that I obsessively collect as we were in a rut with cooking the same things all the time.  We ran across this recipe and thought not only did the picture look mouthwatering, but it looked very easy to make (it is).  So we made it and it was awesome and is now one of our favorite meals.

stir fry1 pound beef roast tenderloin, sliced
1 green onion, chopped
1 Tablespoon oil (I use coconut or ghee oil)
1/2 teaspon onion salt
1/4 teaspoon pepper
2 cloves garlic, minced
1 head of broccoli florets
1/4 cup butter, cubed
1 Tablespoon soy sauce (or Braggs Amino Acids)
1 1/2 teaspoon lemon juice

Number of portions: 4

  1. Add oil to skillet and fry beef and onion. Season with salt and pepper. Cook for 5 minutes.
  2. Stir in garlic and cook for an additional minute. Remove from pan (put in bowl and cover to keep warm).
  3. Using same pan, cook butter and broccoli until tender, approximately 5-8 minutes.
  4. Add meat mixture back to the pan and stir.
  5. Add lemon juice and soy sauce. Heat through.
  6. Enjoy!
