Energy Bars


This recipe is simple and delicious. My family fights over them. My grandmother got the recipe from the New York City Marathon Cookbook published in 1994.

Energy bars1 stick butter
1 cup chopped dates
3 eggs
1 cup sugar
1/2 teaspoon salt
1/4 teaspoon baking powder
2/3 cup flour
1 cup chopped pecans
1/2 teaspoon cinnamon

Number of servings: 12 (160 calories per serving, 5 grams of fat per serving)

  1. Preheat oven to 350°F.
  2. Coat a 9-inch square pan with cooking spray.
  3. Melt butter on low heat in sauce pan.
  4. Remove pan from heat and add dates, eggs, sugar, and salt. Beat well.
  5. Mix in baking powder.
  6. Gently stir in flour, nuts, and cinnamon. 
  7. Pour batter into baking pan and bake for 35-45 minutes or until toothpick inserted near center comes out clean.
