Vegetarian Choices


A multitude of vegetarian choices are available in the dining halls.

The vegetarian items are marked on the daily menu tags and Build Your Plate with this symbol:  Green circle with leaf.  (meaning Meatless, may contain eggs and/or dairy)

Vegan items are marked on daily menu tags and Build Your Plate with this symbol:  Yellow circle with a V in it 


Vegetarian Options Served Daily

Bolton, Oglethorpe, Snelling and the Village Summit Dining Commons

  • Scrambled Eggs, Fried Eggs, Hard-Boiled Eggs
  • Tofu Scramble at Omelet Stations
  • Oatmeal, Grits, Cheese Grits
  • Veggie Sausage, Hash Browns
  • Bagels, Croissants, Biscuits
  • Muffins, Scones, Pancakes (these items are on a rotating basis)
  • Breakfast Cereals
  • Soy Milks and Almond Milks
  • Apple Juice and Orange Juice
  • Whole, 2%, Skim, and Chocolate Milk

  • Bean of the Day with Brown Rice
  • Baked Russet Potatoes and Sweet Potatoes

Depending on the dining commons, the vegetarian line may also feature additional items such as hummus, vegetarian dips and spreads, grilled cheese sandwiches, and additional roasted vegetables.

  • Black Beans, Pinto Beans, Spanish Rice, Roasted Sweet Potatoes, and Chili Lime Tofu along with fresh Vegetables, Guacamole, and freshly made Salsas and Pico de Gallo at the O'Hacienda Burrito Bar

  • Fish and seafood are served every 2 days as part of the 3-week rotation menu on the hot/main lines in every dining commons. Entrees include:
