A multitude of vegetarian choices are available in the dining halls.

Tips for Being Plant-Based in the Dining Commons

The vegetarian items are marked on the daily menu tags and Build Your Plate with this symbol:  Green circle with leaf.  (meaning Meatless, may contain eggs and/or dairy)

Vegan items are marked on daily menu tags and Build Your Plate with this symbol:  Yellow circle with a V in it 


Vegetarian Options Served Daily

Bolton, Oglethorpe, Snelling and the Village Summit Dining Commons

Each vegetarian line features:

  • 2  Vegetarian Lunch Entrees
  • 2 Vegetarian Dinner Entrees
  • Fresh Steamed Vegetable of the Day
  • Bean of the Day with Brown Rice
  • Baked Russet Potatoes and Sweet Potatoes

Depending on the dining commons, the vegetarian line may also feature additional items such as hummus, vegetarian dips and spreads, grilled cheese sandwiches, and additional roasted vegetables.

Most desserts served are vegetarian including Cookies, Cobblers, Cakes, Bread Puddings, Fruit Crisps, Ice cream, and Smoothies.

  • Lemon Grass Kitchen: Tofu Stir-Fry of the Day, Steamed Jasmine Rice, Steamed Brown Rice, Vegetable Egg Rolls or Potstickers, Stir-Fried Vegetable of the Day 
  • Personalized pasta toss: sauteed fresh vegetables with white or wheat pasta served with fresh herbs and alfredo or marinara sauce at Buon Appetito
  • Vegan French Fries at Tanyard Grill
  • Ramen Bar: tofu, white rice, and veggie toppings
  • Personalized pasta toss: sauteed fresh vegetables with white or wheat pasta served with fresh herbs and alfredo or marinara sauce at Skillets
  • Black Beans, Pinto Beans, Spanish Rice, Roasted Sweet Potatoes, and Chili Lime Tofu along with fresh Vegetables, Guacamole, and freshly made Salsas and Pico de Gallo at the O'Hacienda Burrito Bar
  • Edamame Salad served daily on the salad bar
  • The Bowl: a wide variety of wholesome roasted vegetables, high fiber grains, legumes, quinoa, tofu, and falafel options
